Vegetable pâté

Here’s a flavorful vegetable pâté recipe that’s perfect as a spread or dip!

Vegetable Pâté

Ingredients:

  • 1 cup cooked vegetables (like carrots, zucchini, bell peppers, or mushrooms)
  • 1/2 cup cooked lentils or beans (like chickpeas or white beans)
  • 1/2 onion, chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon fresh herbs (like parsley, thyme, or basil)
  • 1 tablespoon lemon juice
  • Salt and pepper to taste
  • Optional: 1 tablespoon nutritional yeast for added flavor

Instructions:

  1. Sauté the Vegetables:

    • In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until soft and translucent, about 5 minutes. Stir in the minced garlic and cook for an additional minute.
  2. Combine Ingredients:

    • In a food processor, combine the sautéed onion and garlic, cooked vegetables, lentils or beans, fresh herbs, lemon juice, salt, and pepper. If using, add nutritional yeast.
  3. Blend the Mixture:

    • Blend until smooth, scraping down the sides as needed. Adjust seasoning to taste, adding more lemon juice or herbs if desired.
  4. Chill:

    • Transfer the vegetable pâté to a serving dish or container. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.
  5. Serve:

    • Serve chilled with crackers, bread, or fresh vegetables.
